According to the research, regular consumption of potatoes increases the risk of Type 2 diabetes by up to 20% specifically when they are consumed deep-fried as French fries. Conversely, eating boiled, mashed, or baked potatoes showed no increased risk of diabetes.
The primary reason behind this is that deep-frying in hot oil adds unhealthy fats and high calories to the potatoes, severely impacting the body's insulin system. Experts state that minor dietary adjustments can help prevent this disease. For instance, replacing French fries with whole-grain foods like oatmeal or brown rice reduces the risk of diabetes by 19%. Similarly, substituting boiled potatoes with whole grains cuts the risk by 4%. However, replacing boiled potatoes with white rice increases the risk further. Experts advise completely avoiding commercial potato chips, recommending that if potatoes are prepared at home, they should be boiled with their skins on or baked using minimal oil to preserve health.
